PIZZA DAMPER PLEASER

INGREDIENTS
• 2 cups self-raising flour
• 1 tablespoon of caster sugar
• A pinch of salt
• 60g butter , chopped
• 3 / 4 cup buttermilk
• 50g salami of your choice , finely chopped
• 1 / 3 cup grated pizza cheese
• 1 / 4 cup pitted and sliced Kalamata olives
• 2 tablespoon of fresh flat-leaf parsley , finely chopped
• Buttermilk for brushing
METHOD
1 . Preheat your fan-forced oven to 220 degrees Celsius . Line a baking tray with baking paper and place it on the top rack .
2 . Sift the flour into a bowl , and then add the sugar and salt . Using your fingertips , rub the butter into the flour mixture until the mixture resembles fine breadcrumbs .
3 . Add the salami , cheese , olives and parsley , and mix well .
4 . Make a well in the centre . Add the buttermilk . Using a butter knife , stir it until a sticky dough forms . Turn the mixture out onto a lightly-floured surface . Gently knead until the dough becomes smooth .
5 . Using your hands , form the dough into a 20cm disc . Pat with your hands to flatten slightly . Place on a prepared tray . Using a sharp knife , cut into eight wedges , but don ' t cut all the way through .
6 . Bake for 20 to 25 minutes . Serve and enjoy !
