TORTILLA TIME !

TRY JD ' S HONEY SOY CHICKEN TORTILLAS WITH FRESH LIME SALSA , AND THANK US LATER .

This is one of my fave recipes . It ’ s not a standard fajita or taco but rather a fusion of Mexican and Asian flavours that are fresh , tangy , light and tasty .

INGREDIENTS
• 6 flour tortillas
• 2 chicken breasts
• 1 teaspoon of minced garlic
• 1 teaspoon of coriander powder
• 2 limes ( 1 for marinade and 1 for salsa )
• 4 tablespoons of soy sauce
• 2 tablespoons of honey
• 1 small green chilli
SALSA INGREDIENTS
• 1 yellow capsicum
• 2 medium tomatoes
• 1 small cucumber
• 1 small red onion
• 1 packet of rocket
• Olive oil
• Salt and pepper
METHOD
1 . Combine the soy sauce , honey , spices , garlic and the juice of one lime in a bowl and stir .
2 . Cut the chicken into strips and slice the chilli finely . 3 . Add the chicken and chilli into the honey and soy marinade .
4 . Cut the red onion finely , dice the tomatoes , capsicum and cucumber into small cubes , and place in a bowl with a pinch of salt and the juice of the other lime , and stir .
5 . Pour some olive oil into a pan and , when hot , add the chilli and the chicken strips .
6 . When the chicken has browned , pour in the rest of the marinade and leave to simmer on a low heat for five minutes .
7 . In another pan , we ' re going to warm our tortillas . This method makes them less doughy and floury . Just add one for 30 seconds on a med-high heat and rotate the tortillas . This will keep them warm .
8 . It ' s time to make our tortilla wraps . Add the chicken mixture to a tortilla with some rocket and the fresh salsa . Wrap and go !
